
Authentic Mutton Kurma Recipe – A Flavourful Delight (A Ramzan Special)
Mutton Kurma is a rich and aromatic dish that pairs perfectly with biryani, chapati, naan, or plain rice. Follow this step-by-step recipe to prepare a delicious, restaurant-style mutton kurma at home.
Ingredients:
· ¾ kg mutton
· 1 tsp turmeric powder
· 1 tsp coriander powder
· 1 tsp dry red chili powder
· Salt as required
· cardamom, clove, cinnamon – as needed
· 2 biryani leaves
· 1 tsp ginger-garlic paste
· 6 dry red chilies (adjust as needed)
· Cashew nuts as required
· ¼ tsp whole pepper
· 2 Kashmiri chilies
· Curry leaves as needed
· Coriander leaves as required
· ½ grated coconut
· 2 tsp coconut oil
· ¼ kg small onions (chopped)
· 2 tomatoes (seed removed, chopped)
· 2 tsp refined oil
Cooking Process:
Step 1: Cooking the Mutton
In a pressure cooker, combine mutton, turmeric powder, coriander powder, dry red chili powder, salt, cinnamon, cardamom, star anise, biryani leaves, and ginger-garlic paste. Add a small amount of water and cook until the mutton becomes tender.
Step 2: Preparing the Masala Paste
In a frying pan, heat 2 teaspoons of coconut oil. Add cashew nuts, whole pepper, biryani leaves, dry red chilies, Kashmiri chilies, curry leaves, and grated coconut. Sauté until the coconut turns golden brown. Let it cool and grind it into a smooth paste.
Step 3: Mixing the ingredients
In a separate pan, heat 2 teaspoons of refined oil. Add anise and chopped onions. Sauté until golden brown, then add chopped tomatoes. Cook until soft, then mix in curry leaves and ginger-garlic paste. Fry until the raw aroma disappears. Now, add salt, coriander powder, turmeric powder, and dried red chili powder. Stir well and cook for a few minutes before adding the ground masala paste. Let it simmer for 2-3 minutes.
Step 4: Combining the Mutton and Masala
Add the cooked mutton along with its stock to the seasoned masala. Mix well. If necessary, add a little water to adjust consistency. Cover and let it simmer for 15-20 minutes. Once done, garnish with fresh coriander leaves.
