Egg Kothu Parotta Recipe

Ingredients

● Chopped onions: 1 medium

● Green chilies: 2 (slit)

● Tomato: 1 large (chopped)

● Egg: 2

● Curry leaves: A handful

● Coriander leaves: For garnish

● Coriander powder: 1 tsp

● Red chili powder: 1 tsp

● Salt: To taste

● Tomato ketchup: 1 tbsp

● Parotta (preferably leftover): 2-3 (torn into pieces)

● Oil: 2 tbsp



Cooking Process

1. Prepare the Ingredients

● Chop the onions and tomato.

● Slit the green chilies.

● Tear the parottas into small pieces.

● Keep all the ingredients ready.

2. Cook the Onions and Tomatoes

● Heat 2 tbsp of oil in a pan.

● Add the chopped onions and sauté until they turn golden brown.

● Add green chilies and curry leaves, and sauté for a few more seconds.

● Add the chopped tomatoes, coriander powder, red chili powder, and salt.

● Cook until the tomatoes soften and the oil begins to separate from the masala.

3. Add the Eggs

● Crack the eggs into the pan and scramble them into the masala mixture.

● Cook the eggs until they are fully scrambled and cooked through.

4. Add the Parotta Pieces

● Add the torn parotta pieces into the pan.

● Mix everything together well, breaking the parottas into smaller bits.

● Pour in the tomato ketchup and stir well to combine, ensuring the parottas absorb all the flavors.

5. Garnish and Serve

● Garnish with fresh coriander leaves.

● Serve hot and enjoy the delicious Egg Kothu Parotta as a snack or a meal.
