      Ingredients:

  • 500g chicken (cut into pieces)

  • 3 tbsp refined oil

  • 1 tbsp garam masala

  • 2 onions (blended into a paste)

  • 2 tomatoes (pureed)

  • 1 tbsp ginger-garlic paste

  • 2 tbsp curd

  • 1 tsp turmeric powder

  • 1 tsp Kashmiri chili powder

  • 1 tsp coriander powder

  • 1 tsp curry masala powder

  • Salt (as required)

Instructions:

  1. Heating the Oil & Sautéing the Spices: Begin by heating three tablespoons of refined oil in a pan over medium heat. Once the oil is sufficiently hot, add one tablespoon of garam masala. Stir it lightly for a few seconds to release its aroma.

  2. Adding the Base Ingredients: Now, add the onion paste to the pan and sauté until it turns golden brown. Follow this by incorporating the tomato puree and ginger-garlic paste. Stir continuously while cooking for 5 to 10 minutes to ensure the mixture blends well and the raw aroma disappears.



  3. Marinating the Chicken: Meanwhile, in a separate bowl, take the chicken pieces and mix them well with curd, half a teaspoon of turmeric powder, and a small amount of salt. Let it rest for a few minutes to absorb the flavors.

  4. Mixing Spices into the Gravy: Returning to the pan, add a pinch of salt as per taste along with the masala powder, curry masala, Kashmiri chili powder, turmeric powder, and coriander powder. Stir the mixture well to ensure the spices are evenly distributed. Cook until the gravy reaches a thick consistency.

  5. Cooking the Chicken: Now, add the marinated chicken pieces to the pan. Avoid adding water at this stage, as the chicken will release its own juices while cooking. Stir everything together, ensuring the chicken is coated well with the gravy.

  6. Final Simmering: Allow the mixture to cook on medium heat for some time. If needed, add a little water to achieve the desired semi-dry consistency. Close the pan with a lid and let it cook for around 15 minutes until the chicken is fully tender and infused with flavors.
