
Semi-dry Chicken Gravy Recipe

Ingredients:
500g chicken (cut into pieces)
3 tbsp refined oil
1 tbsp garam masala
2 onions (blended into a paste)
2 tomatoes (pureed)
1 tbsp ginger-garlic paste
2 tbsp curd
1 tsp turmeric powder
1 tsp Kashmiri chili powder
1 tsp coriander powder
1 tsp curry masala powder

Instructions:
Heating the Oil & Sautéing the Spices: Begin by heating three tablespoons of refined oil in a pan over medium heat. Once the oil is sufficiently hot, add one tablespoon of garam masala. Stir it lightly for a few seconds to release its aroma.
Adding the Base Ingredients: Now, add the onion paste to the pan and sauté until it turns golden brown. Follow this by incorporating the tomato puree and ginger-garlic paste. Stir continuously while cooking for 5 to 10 minutes to ensure the mixture blends well and the raw aroma disappears.
Marinating the Chicken: Meanwhile, in a separate bowl, take the chicken pieces and mix them well with curd, half a teaspoon of turmeric powder, and a small amount of salt. Let it rest for a few minutes to absorb the flavors.
Mixing Spices into the Gravy: Returning to the pan, add a pinch of salt as per taste along with the masala powder, curry masala, Kashmiri chili powder, turmeric powder, and coriander powder.
