Special Sambar Rice Recipe: A Traditional Tamil Delight

Steps to make Special Sambar Rice 


Ingredients

  • Gram dal: 1 tbsp
  • Gingelly oil: 2 tbsp
  • Curry leaves: A handful
  • Coriander seeds: 1 tbsp
  • Fenugreek seeds: 1/2 tsp
  • Cumin: 1/2 tsp
  • Red chillies: 4-5
  • Asafoetida: A pinch
  • Coconut: 2 tbsp (grated)
  • Shallots: 10-12
  • Toor dal: 1/2 cup
  • Tamarind: A small lemon-sized ball (soaked and pulp extracted)
  • Turmeric powder: 1/4 tsp
  • Tomato: 1 large (chopped)
  • Carrot: 1 (chopped)
  • Drumsticks: A few pieces
  • Salt: To taste
  • Ghee: 1 tbsp
  • Coriander leaves: For garnish
  • Potato: 1 (chopped)
  • Kashmiri chillies: 2


Cooking Process:



1. Prepare the Ingredients

  • Wash and pressure cook toor dal with 2 cups of water and a pinch of turmeric until soft. Mash and set aside.
  • Soak tamarind in warm water and extract the pulp.
  • Chop the tomato, carrot, potato, and drumsticks into medium-sized pieces.

2. Roast and Grind the Masala

  • Heat 1 tsp gingelly oil in a pan.
  • Add coriander seeds, fenugreek seeds, cumin, red chillies, and asafoetida. Roast until aromatic.
  • Add grated coconut and roast lightly. Cool and grind into a smooth paste with water.

3. Cook the Vegetables

  • Heat 2 tbsp gingelly oil in a pan.
  • Add mustard seeds, and let them splutter.
  • Add curry leaves and shallots, and sauté until golden.
  • Add carrot, potato, drumsticks, and tomato, and sauté for a few minutes.

4. Prepare the Sambar Base

  • Add tamarind pulp and 2 cups of water to the vegetables.
  • Add turmeric powder, salt, and Kashmiri chillies.
  • Simmer until the vegetables are cooked.

5. Add Dal and Masala

  • Add the mashed toor dal and the ground masala paste to the simmering vegetables.
  • Adjust the consistency with water if needed.
  • Simmer for 5-7 minutes, stirring occasionally.

6. Combine with Rice

  • Cook 1 cup of rice until soft.
  • Mix the cooked rice with the prepared sambar base, ensuring it’s evenly combined.

7. Garnish and Serve

  • Add ghee on top and garnish with fresh coriander leaves.
  • Serve hot with papad or pickle.
